This is a trick question. The movie actually begins with Fred being born which is not technically considered his first birthday but it is his birthdate.
After that the movie quickly moves from Fred being a toddler without his age being stated to Fred being a six year old first grader, after which his mom states that next weekend is Fred's birthday which means he will be seven. This happens at the time mark of 0:08:30 into the movie.
Then at the time mark of 00:10:30 into the film when the sceintists are reviewing the profiles of the children, they mention that Fred Tate is 7 years old and in the second grade when they look at his, which means that Fred has already celebrated his birthday. Finally, the movie ends with Fred turning eight years old and celebrating it with friends and family where a white cake in the shape of an eight is clearly visible at the time mark of 1:33:50 into the movie, so the answer to your question is that Fred consciously celebrated two birthdays...those being his seventh and eighth birthdays.

I remembered that it is the next day. via the way, how would you sense if somebody published a question asking if people remembered while it is Alice Cullen's birthday? merely because of the fact the question is approximately Harry Potter would not make it much less unsolicited mail-ish and obnoxious.
