    For safety, the USDA recommends cooking ground pork patties and other ground mixtures to 160 °F. Whole muscle meats such as chops and roasts and fresh cured ham should be cooked to 160 °F (medium), or 170 °F (well done). Remember that appliances and outdoor grills can vary in heat. Use a meat thermometer to check for safe cooking and doneness of pork.

    140F is crazy. Many bacteria don't die until 145F. 150F would be safe if you could be 100% sure that every bit of the meat had reached that temperature, but you kind of need a fudge factor in case some parts of the meat are cooler than the parts you tested.

    I generally try to target a peak temperature of 160F. This usually means removing the meat somewhere around 153-156F, depending on the size of the meat, to allow it carryover to 160F.
