What should I cook today? child friendly?

I am totally out of ideas today! would love your suggestions. I have a well stocked kitchen so go for it.

I have 3 young girls (no chicken or rice please we had yesterday)

    How about making their individual Shepherd's or Fish Pies.

    (if you know Shepherd's Pie, think along those lines for the fish pie)

    Spaghetti Casserole

    Ingredients

    6 ounces uncooked spaghetti

    1 tablespoon butter

    1/3 cup shredded Parmesan cheese

    1 (26 ounce) jar meatless spaghetti sauce

    2 cups chopped green pepper

    1 (14.5 ounce) can diced tomatoes, drained

    8 ounces part-skim ricotta cheese

    1 (8 ounce) can mushroom stems and pieces, drained

    1 small onion, chopped

    3 garlic cloves, minced

    12 Fresh basil leaves, thinly sliced

    1/2 teaspoon dried oregano

    3 cups shredded part-skim mozzarella cheese, divided

    Directions

    Cook spaghetti according to package directions; drain. Add butter and Parmesan cheese; toss to coat. In a large bowl, combine the spaghetti sauce, green pepper and tomatoes. In a blender, process the ricotta cheese until pureed. Add to the spaghetti sauce mixture. Stir in the mushrooms, onion, garlic, basil, oregano and 1-1/2 cups mozzarella cheese. Add the spaghetti; toss to coat.

    Transfer to a 13-in. x 9-in. x 2-in. baking dish coated with nonstick cooking spray. Sprinkle with remaining mozzarella. cover; bake at 350 degrees F for 40-45 minutes or until heated through.

    Turkey Sloppy Joes.

    1 tablespoon(s) olive oil

    4 carrots, coarsely grated (2 cups)

    1 medium onion, minced

    1 clove(s) garlic, minced

    Coarse salt and ground pepper

    3 tablespoon(s) tomato paste

    3/4 pound(s) ground turkey (93% lean, dark meat)

    1 can(s) (28 ounces) crushed tomatoes

    2 tablespoon(s) dark-brown sugar

    1 tablespoon(s) cider vinegar

    1 teaspoon(s) Worcestershire sauce

    4 whole-wheat hamburger rolls, split

    Directions.

    In a large saucepan, heat oil over medium; add carrots, onion, and garlic. Season with salt and pepper. Cook, stirring occasionally, until softened, 4 to 5 minutes.

    Add tomato paste and cook, stirring, 1 minute. Add turkey; cook, breaking up meat with a spoon, until no longer pink, 4 to 5 minutes.

    Add tomatoes, sugar, vinegar, and Worcestershire sauce. Cook, stirring occasionally, until slightly thickened, 12 to 14 minutes. Serve on whole-wheat rolls.

    Chicken Fingers.

    Chicken Fingers:

    1 pound(s) chicken tenders (The package might call them "loins")

    1 cup(s) flour

    1 teaspoon(s) salt

    1/2 teaspoon(s) pepper

    1/4 teaspoon(s) baking powder

    1 egg

    Cooking spray

    Honey Baby Sauce:

    1/4 cup(s) honey

    1/4 cup(s) spicy brown mustard

    Directions

    Preheat the toaster oven to 375 degrees. Rinse the chicken under running water in the colander, and blot it dry with the paper towels. The drying part is important because the coating won’t stick to wet chicken, so don't skip it.

    Combine the dry ingredients in one of the shallow dishes. (Since this recipe uses baking powder, you need to measure out the dry ingredients carefully.) Use the fork to mix them together.

    Use the fork to beat the egg lightly in the other shallow dish. Now the fun part: dredge each piece of chicken first in the flour (shake off any extra), then in the egg, and then back in the flour. Finally, place the chicken on the baking sheet. Lightly spray the tops of the dredged chicken with oil.

    Bake for 15 minutes. Flip the chicken pieces over with the tongs. Lightly spray them with oil, and bake another 5 minutes until golden brown.

    To make sauce: Combine honey and mustard in a small bowl. If you're sharing, let each person have their own little bowl of sauce.

    Let the chicken fingers cool before you dip them in Honey Baby Sauce. Chow down.

    Honey-Ginger Chicken Bites.

    2/3 cup(s) honey

    2 tablespoon(s) minced peeled fresh ginger

    2 tablespoon(s) fresh lemon juice

    2 tablespoon(s) cider vinegar

    2 tablespoon(s) low-sodium soy sauce

    2 teaspoon(s) dark sesame oil

    1 teaspoon(s) grated orange rind

    1 teaspoon(s) Worcestershire sauce

    4 clove(s) garlic, minced

    1 1/4 pound(s) (about 16 thighs) skinless, boneless chicken thighs, cut into bite-sized pieces

    Cooking spray

    1 teaspoon(s) salt

    1/4 teaspoon(s) black pepper

    2 teaspoon(s) cornstarch

    2 teaspoon(s) water

    2 teaspoon(s) sesame seeds, toasted (optional)

    Directions

    Combine first 9 ingredients in a large zip-top plastic bag; seal and shake well. Add chicken; seal and toss to coat. Refrigerate at least 2 hours or overnight, turning occasionally.

    Preheat oven to 425 degrees F.

    Remove chicken from bag, reserving marinade. Arrange chicken in a single layer on the rack of a broiler pan coated with cooking spray. Sprinkle chicken with salt and pepper. Bake at 425 degrees F for 20 minutes, stirring once.

    While chicken is cooking, strain marinade through a sieve into a bowl; discard solids. Place marinade in a saucepan; bring to a boil. Cook 3 minutes; skim solids from surface. Combine cornstarch and water in a small bowl; stir with a whisk. Add cornstarch mixture to pan, stirring with a whisk; cook 1 minute. Remove from heat; pour glaze into a large bowl.

    Preheat broiler.

    Add chicken to glaze; toss well to coat. Place chicken mixture on a jelly roll pan; broil 5 minutes or until browned, stirring twice. Sprinkle with sesame seeds, if desired.

    Picante Turkey Rolls.

    4 (10-inch) flour tortillas, warmed

    1/4 cup(s) cream cheese, softened

    1/2 pound(s) thinly sliced deli turkey breast

    1/2 cup(s) Pace® Picante Sauce

    1 large avocado, peeled, pitted, and chopped (about 1 cup)

    Directions

    Spread 1 tablespoon cream cheese on each tortilla to within 1/2 inch of the edge. Top each with about 4 turkey slices, 2 tablespoons picante sauce, and 1/4 cup avocado.

    Roll up the tortillas tightly, leaving the ends open. Cut each roll in half. Serve with additional picante sauce for dipping.

    To make appetizer rounds: Cut each rolled tortilla into 1/2-inch slices and arrange on a serving platter. Serve with additional picante sauce for dipping.
