How do you learn lettering?
I want to learn how to do those beautiful kinds of work that you normal see with inspiration quotes. I think it's called hand lettering. How do people normally learn it? How long would it take to learn? Do you really have to know if the fonts work well together?

It's called calligraphy. You might want to check with your local community center or college to see if anyone offers classes in calligraphy. There are also books available, just do a search.
