Why do chicks chirp but not gobble?
Just a simple question, why when it grows up it gobbles, but as it's young newly hatched form it chirps? voice box, nostrils, what?

Turkeys are the birds that gobble, and when they are young they are called poults. Chicks are commonly referred to as baby chickens.
As all young animals, birds have a very different noise, and sound when they are young. Even within humans does our voice change as we age. It is when an animal becomes sexually mature that its tone changes. Of course, just like humans there are the ups and downs of voice changing time, and with the males it is more noticeable.
Why does ones voice change? Hormones are the trigger, as well as change in size of the voice box.
