Just like any other part of the world there are Fish and Chips restaurants in QC. But if you really want to try local cuisine with potatoes as the star, you gotta eat our poutine.

Canada is not British, and hasn't been for over 150 years. I have eaten fish 'n chips in Quebec, so, yes, they do have it. They also have poutine instead of regular chips - something that is really catching on in the rest of Canada.
